今天要去拍攝的是一家胡椒蝦店。Latte印象中台灣最早出現胡椒蝦是在釣蝦場,在釣場釣起的泰國蝦,除了最簡單的鹽烤,還可請店家幫忙加工,於是就有了胡椒蝦、燒酒蝦還有檸檬蝦一類的小吃。
Today, I’m going to shoot a pepper shrimp shop. According to Latte’s impression, in Taiwan, pepper shrimp first appeared in fishing grounds. In addition to the simplest salt roasting, the Thai shrimp caught in the fishing ground can also be cooked by the shop owner. Thus, there are some snacks such as pepper shrimp, wine shrimp and lemon shrimp.
但現在,不用辛苦去釣場就可以在很多店裡吃到美味的胡椒蝦啦。
胡椒蝦採用的泰國蝦,是台灣的叫法,實際上是一種學名為羅氏蝦的淡水蝦。
But now, you can eat delicious pepper shrimp in many shops without having to go fishing.
The shrimp used in pepper shrimp is actually a kind of freshwater shrimp with scientific name of Macrobrachium rosenbergii, giant river shrimp is what this called in Taiwan
胡椒蝦其製作過程要求高溫直火,所以大部分店家都會使用一種材質為鋁錫合金的特殊鍋具,高溫耐燒不易裂,聽說比陶瓷鍋還要耐用。將洗淨的蝦放入鍋中,加入料酒等調味料後撒上大量胡椒粉,然後開火將其燜熟,在快要出鍋時關火,再用吹風機將鍋中水分盡量逼乾,從而讓味道完全滲入蝦中。
Cooking pepper shrimp requires direct fire with high temperature, so most shops will use a special kind of pot made of aluminum tin alloy, which is resistant to high temperature and is not easy to crack. It is said that it is more durable than ceramic pot. Put the washed shrimp into the pot, add cooking wine and other seasonings, sprinkle with a large amount of pepper, and then open fire to stew it. Turn off the fire when it is about to come out of the pot, and then use a blower to dry the water in the pot as far as possible, so that the taste can completely penetrate into the shrimp
這家同新濠胡椒蝦店,坐落於士林夜市,是一家擺在手機維修店門前的小攤。老闆呢,同時經營著手機維修店和這個胡椒蝦小攤。這個奇妙的組合起源於老闆一個養蝦的朋友的建議。
感謝這位朋友,才能讓大家吃到這麼美味的胡椒蝦。小攤很小,除了維修店裡的一個沙發,沒有其他座位,所以基本都是外帶。
This Tongxinhao Pepper Shrimp shop is located in Shilin Night Market. It is a stall in front of a mobile phone repair shop. The boss also runs this cell phone repair shop. This intriguing combination originated from a suggestion of a shrimp raising friend of the boss.
Thanks to this friend, so that we can eat this delicious pepper shrimp today. The stall is very small, except for a sofa in the repair shop, there are no other seats, so orders are basically take-out.
Latte當天去的時候,外賣平台的訂單就一直沒有停過,有的客人一下單就是一兩千的蝦,還留言問老闆:吃這麼多蝦會不會痛風啊!
When Latte went that day, the orders on the takeout platform had never stopped. Some customers ordered 1000 or 2000 NTC of shrimps, and left a message asking the boss will he suffer gout if eating so many shrimps!
雖然現在店裡生意火爆,但老闆說剛開始時蝦的味道也並沒有這麼好,但感謝有在餐廳工作的朋友幫忙老闆調整配方,改進口味,才有了現在的同新濠胡椒蝦店。老闆的店裡沒有養殖水箱,蝦都是當天從屏東送來的新鮮蝦,當天賣完,從不用隔夜蝦,這也是興隆的生意帶給老闆的底氣啊!
Although the business in the store is booming now, the boss said that the shrimp taste was not so good at the beginning, but thanks to a friend who worked in the restaurant to help him adjust the formula and improve the taste, here comes current Tongxinhao pepper shrimp. There is no cultivation tank in the boss’s shop. All the shrimps are sent directly from Pingdong on the same day. There won’t be any overnight shrimp. This is the confidence that the booming business brings to the boss!
Latte前去拍攝,有幸能在手機店裡的沙發上享用老闆的特別供應——鮮蝦蒸河粉,蝦肉緊緻Q彈又非常入味,完全停不下來,一下子明白了為什麼會有顧客即使擔心痛風也捨不下這一口蝦了!
When latte went to shoot, I was lucky to enjoy the boss’s special supply of Steamed flat rice-noodles with fresh shrimp on the sofa in the mobile phone store. The shrimp was so tight and delicious that I couldn’t stop it. Suddenly I understood why some customers will not give up the shrimp even if they worry about gout!
