大隱隱於市,是一種頗具俠客氣息的生活哲學,也是美食界顛撲不破的真理。這家深藏於台北景美菜市場的廖家紅糟肉,沒有店面,也無招牌,僅靠眾人的口口相傳,已在當地開了半個多世紀。Latte也是經人推薦,才知道了這家在當地久享盛名的小店。
There is an ancient Chinese saying that “the best ones hide in noisiest fair”. It is kind of a hermit living philosophy, but also irrefutable truth of the food world. Liao’s red yeast fried pork, which hides in Taipei’s Jingmei food market, has no stores or signboards. However, it has been around for more than half a century by word of mouth. Latte was also recommended to find out about this famous local store.

廖家紅糟肉,聽店主講,起初也販賣餛飩麵、黑白切這類小食,因其紅糟肉格外美味,更受大家歡迎,逐漸开始專營紅糟肉以及養生紅麴酒。現如今傳到了第三代,仍一直採用需經過至少兩個月發酵的自製福州紅麴對肉進行醃製,而且現任店主將紅糟肉的部位拓展到了七種,有傳統的五花、略帶油脂的梅花,也有全瘦的里肌等等,讓大家總能找到合乎心意的一款。
According to the shop owner, besides red yeast fried pork, Liao’s store also sold snacks like wonton noodles or visceral soup at first. The pork stands out because of its delicious and popularity, so they gradually began to specialize in red yeast fried pork and healthy red yeast wine. Now the store has spread to the third generation, and it still uses the self-made Fuzhou red rice yeast which needs at least two months’ fermentation to marinate the meat. Moreover, the current shopkeeper has expanded the meat to seven kinds, including traditional streaky pork, plum meat with a little fat, and lean tenderloin, etc. so that everyone can always find a suitable one.
因為採用了自製紅麴醬料,炸製時所用的油也是自己熬製的豬油,節省下來的成本讓老闆在調配醃料時格外豪放,足量醃料讓紅糟肉更加鮮紅明亮,成品更是香酥可口,令人垂涎欲滴。
The oil used in frying is lard which also cooked by the owner. The cost savings make the boss extra bold and generous when making the marinade. With abundant self-made marinade, the meat is redder and brighter., and the finished product is crisp and delicious.

就是這家每周星期二/四/六/日僅從八點半開始營業四個小時的古早店,在谷歌地圖美食評價的分數卻高達4.8分。但凡店鋪營業時或在這附近起早排隊、或不辭辛苦開車過來的顧客絡繹不絕,這讓Latte忍不住感慨,無論什麼行業,都需要用心做,將自己沉澱下來,心無旁騖,才能有所成就啊!
The same old shop, which only opens for four hours from 8:30 on Tuesdays, Thursdays, Saturdays and Sundays every week, scored 4.8 points on Google maps. Or in the vicinity of the morning queue ,or take pains to drive over , there is always an endless stream of customers whenever shop is open, which makes latte feel that no matter what industry, we need to work hard, settle down and concentrate on nothing else, so as to achieve something!
